‘Restaurante Japón’: 2nd store

On August 30th, a new Japanese restaurant called “Restaurante Japón” was opened on Nueva Costanera, a luxury shopping street in Santiago, the capital of Chile.

‘Restaurante Japón’ is a long-established Japanese restaurant that opened in 1978.

In March 2017, JETRO conducted an interview.

This time, I asked Yukiyo Saotome, the second-generation store owner, how he opened the second store and the store concept.

Is there any difference in concept between the main store and the second store?

(Answer)

The second store is located on a high-end shopping street.

For this reason, we are trying to create a high-class feel for serving dishes.

The Japanese izakaya-style menu is also enhanced.

Japanese beer, sake and shochu are also available on the menu.

What are the recent changes in food trends and popular menus of Chilean customers?

(Answer)

Miso soup and licking (tuna and salmon) are surprisingly popular.

At the head office, salmon and ‘Kani Kama’ wrapped in cucumbers are one of the popular items.

On the other hand, shrimp and Sentja (Chirii baragani) are popular in the second store, not ‘Kani Kama’.

Because there was a desire to use a slightly higher-quality food, the second store began to use Sentja.

There is a lot of space in the main store, and there is a tendency for a combination menu such as ‘shipping’ to appear frequently.

For delivery, salmon surimi tempura (without shari) and scroll menus (wrapped with ‘Kanikama’ or ‘Nori’) are popular.

At the second store, sales of ‘Turn-up’ are strong so far.
